Store Manager 

Job Description- the bakery personnel responsible for total store front-end operations in a given location.

Schedule- anytime necessary to assure store operations, but generally daytime (about 48-50hrs/week).

Decorating Manager

Job Description- the bakery personnel responsible for all decorated/pastry items.

Schedule- generally 6am-3pm Tu-Sa, but anytime necessary to assure department operations (about 43-48hrs/week).

Duties-

  • Keep decorating staff focused on customer service!
  • Ensure timely & efficient completion of all local decorated & pastry items
  • Scheduling of all decorators, pastry, and icing personnel
  • Assign any work duties to all decorating dept personnel
  • Maintain team cohesion and morale
  • Wage cost percentages for decorating department
  • Training of new decorators
  • Inventory of decorating supplies
  • Cleanliness of decorating department
  • Assists with disciplinary reports for decorating department

Production Manager

Job Description- the bakery personnel responsible for all baked, fried, & cooked items.

Schedule- generally 3am-12pm Mo-Fr, but anytime necessary to assure department operations (about 43-48hrs/week).

Duties-

  • Keep production staff aware that customer service is the goal!
  • Ensure timely & efficient completion of all production
  • Quality Control of all non-decorated products
  • Expediting of all products out of kitchen to front
  • Enforce stock rotation both in showcases and in freezers
  • Scheduling of all production people
  • Wage cost percentages within production department
  • Training of all bakers, donut fryers, & baker’s assistants
  • Production area clean and neat
  • Assist with disciplinary reports as needed within department
  • Inventory of baking supplies
  • Listing & Managing Stales

Sales (AM or PM) Leader

Job Description- the bakery personnel responsible for phone & counter sales in the store.

Schedule- generally 5am-2pm or 10am-7pm Mo-Sa with a day off during the week (about 40-42hrs/week).

Duties-

  • Maintaining exceptional customer service!
  • Assists in supervising general sales staff
  • Maintain team cohesion and morale
  • Coordinates phone and counter order taking
  • Assists in training all new employees in counter sales and order taking
  • Responsible for monitoring cash register procedure
  • Wedding cake sales
  • Handles customer complaints at the counter level
  • Lobby and sales floor clean, neat, and orderly
  • Doors & Security
  • Promote customer service constantly
  • Assist with disciplinary reports filled out for department
  • Inventory of all front-end supplies, including deli, espresso, etc.

Baking Leader

Job Description- the bakery personnel responsible for local production of baked, fried, & cooked items.

Schedule- generally 5am-2pm Mo-Fr, but anytime necessary to assure department operations (about 40-42hrs/week).

Duties-

  • Keep remote baking team aware that customer service is the goal!
  • Scheduling daily production of all non-decorated products
  • Ensure timely & efficient completion of all local production
  • Assist with training bakers, donut fryers, & baker's assistants
  • Maintain team cohesion and morale
  • Monitor quality control of all non-decorated products
  • Expediting of all products out of kitchen to front
  • Monitor stock rotation both in showcases and in freezers
  • Production area clean and neat
  • Assist with disciplinary reports as needed within department
  • Inventory of baking supplies
  • Listing & Managing Stales

Cake Icing Position

Job Description- the bakery personnel responsible for keeping the cake decorators supplied with cakes ready to be decorated.

Schedule- 5am~2pm Tu-Sa  (about 40hrs/week).

Duties-

  • Checks the cake orders for the day and the following day.
  • Puts the orders in time sequence and checks for any problem orders as well as petit four orders.
  • Checks with decorating manager for extra cakes needed.
  • Pulls frozen cake from the freezer.
  • Cuts cake into appropriate sizes and apply fruit fillings.
  • As they are thawing, looks forward to the next batch to be set-up
  • Applies icing and places (in time order) the cakes for the decorators.
  • After all cakes are set-up and iced for the day then the future orders are to be looked through again. Checking for early cakes and petit four orders.
  • Cake prep area, tools, and freezers are to be straightened and cleaned.

Pastry Assembly Position

Job Description- the bakery personnel responsible for pastries, dessert cakes, pies and gelato.

Schedule- 5am~2pm Tu-Sa (about 40hrs/week).

Duties-

  • Sorting pastry area orders out at start of day.
  • Preparing list of work for day taking into account two day staging of products, i.e. petit fours.
  • Prepares all pastries, dessert cakes, pies, and gelato.
  • Assists Decorating Manager with fruits for wedding cakes.
  • Maintains supplies for products including gelato.
  • Inventories gelato supplies weekly.
  • Keeps pastry area generally tidy, equipment cleaned, and prepared for use.

Decorator Position

Job Description- the bakery personnel responsible for custom cakes, case (extra) cakes, cupcakes, and decorated cookies.

Schedule- 6am~3pm Mo-Sa with a day off during the week (about 42hrs/week).

Duties-

  • Prepares all cakes, case cakes, cupcakes, and decorated cookies.
  • Finishes decorated items otherwise prepared, i.e. petit fours, baby cakes, etc.
  • Maintains list of products produced daily and submits them to the office upon completion of the next day.
  • Keeps decorating area generally tidy, equipment cleaned, and prepared for use.
  • Keeps backup decorating supplies prepared for sales staff in case of need.
  • Maintains general information to assist in cake icing and waiting the front counter.

Sales Position

Job Description- the bakery personnel responsible for direct customer sales by phone, fax, email, and in person.

Schedule- 5:30am-2pm Mo-Sa with a day off during the week (about 40hrs/week).
Schedule- 10am-6:30pm Mo-Sa with a day off during the week (about 40hrs/week).

Duties-

  • Give exceptional customer service!
  • Greets customers as they enter.
  • Assists customer in their purchase by direct salesmanship.
  • Writes orders for custom cakes, general products, etc. in a detailed & thorough manner.
  • Provide basic information on products, operations, and the business (what’s in this, when can I get this, where are you located).
  • Take phone messages for employees & office.
  • Keep cases full of product and fronted properly for best presentation.
  • Produce sandwiches and soups.
  • Produce coffees & hot cocoas.
  • Prepare meat items for next day.
  • Maintain deli prep unit & prepare next day.
  • Maintain stock of basic supplies for front of house.
  • Keeps dining area generally tidy, drink station & tables cleaned and prepared for use.
  • Prepare/Close store for the front of house.

Cleaning Position

Job Description- the bakery personnel responsible for cleanliness of the bakery.

Schedule- 9am-6pm Mo-Sa with a day off during the week (about 40hrs/week).

Duties-

  • Keeps bakery clean and ready to service customers.
  • Accomplishes daily & weekly cleaning checklists in a timely fashion.
  • Cleans and sanitizes all dishes, tools, trays, and utensils used by the bakery.
  • Cleans and sanitizes all surfaces, tables, equipment, and areas.
  • Sweeps and mops all floors.
  • Keeps bakery supplies generally organized & tidy.
  • Keeps bakery grounds clean and in good repair.
  • Maintains compliance with Health Department standards.
  • Maintains general inventory of cleaning supplies.
  • Keeps dish areas generally tidy, equipment cleaned, and prepared for use.

Baker Position

Job Description- the bakery personnel responsible for all baked items.

Schedule- various available mostly early morning to early afternoon (about 40hrs/week).

Duties-

  • Sorting production area orders out at start of day.
  • Prepares all baked items.
  • Assists in keeping cases filled with product.
  • Maintains general list of supplies necessary to produce products.
  • Keeps production areas generally tidy, equipment cleaned, and prepared for use.
  • Keeps backup production supplies prepared for sales staff in case of need.

Baker’s Helper Position

Job Description- the bakery personnel responsible for assisting the bakers and facilitating the speed of their production runs.

Schedule- various available mostly early morning to early afternoon (about 40hrs/week).

Duties-

  • Assists in keeping cases filled with product.
  • Assists bakers in preparing for production runs.
  • Assists bakers in facilitating production runs.
  • Sorts and puts away batches of product into storage.
  • Updates general list of supplies necessary to produce products.
  • Keeps production areas generally tidy, equipment cleaned, and prepared for use.

Donut Position

Job Description- the bakery personnel responsible for all fried items.

Schedule- 8pm-5am Mo-Sa with a day off during the week (about 40hrs/week).

Duties-

  • Sorting donut orders out at start of night.
  • Prepares all fried items.
  • Assists in initial filling of cases with product.
  • Maintains general list of supplies necessary to produce products.
  • Keeps production area generally tidy, equipment cleaned, and prepared for use.
  • Maintains fryer oil freshness.

Delivery Position

Job Description- the bakery personnel responsible for delivery of products to stores & customers.

Schedule- 4am-12pm Tu-Sa (about 40hrs/week).

Duties-

  • Provide exceptional customer service at every stop!
  • Sorting delivery schedule out at start of day.
  • Generally verify orders before departure.
  • Deliver products to location timely and responsibly.
  • Deliver orders, supplies, and packages to each store.
  • Drive appropriately while on deliveries.
  • Maintains orders, transfers, and other paperwork until turned in to office.
  • Maintains appearance & presentation of self that is professional and in accordance with bakery reputation.
  • Keeps vehicles generally tidy, in good repair, and prepared for use.
